Story to tell about yesterday at NIACC. It was a gardening seminar. Being we are from Dougherty, I knew I had to give them something in honor of St. Patrick. So the day that I am an O'Litterer, we passed out little seed bags from Becky's Greenhouse in Lil'Ireland. They were called Rainbow seeds, which will grow lots of smiles when they are seen. It was so much fun to hand out to each one. At the end of this, I will tell you what the rainbow seeds were.
Creamy Reuben Soup
1/2 c. chopped onion
1/4 c. chopped celery
1/4 c. chopped green pepper
1/4 c. butter
2 Tbls. all purpose flour
1 c. beef broth
2 c. half and half cream
1/4 lb. sliced deli corned beef coarsely chopped
3/4 c sauerkraut rinsed and well drained
1/4 tsp salt
1/4 tsp. pepper 1 c. shredded Swiss cheese
In a large sauce pan, sauté the onion, celery and green pepper in better until tender. Stir in flour until blended, gradually add broth. Bring to a boil, cook and stir for 2 minutes or until thickened. Reduce heat to low. Add the cream, corned beef, sauerkraut, sat and pepper. Heat through( don't boil.) Stir in cheese until melted. Yield 5 cups.
The Rainbow Seeds were Skittles.
